Wildcard Wednesday: happy hump day!


Yay it’s Wednesday!  As the weeks go by I get more, and more excited for Tax season to be OVER.  Ugh, 10 more weeks til I get my baby back.  I think this season is the worst because I am home allll day, alone…by muhself.  With only the cats to talk to.  Um, no…I mean…I don’t talk to my cats… :S hehe.

So after a bingy, bingy Sunday I finally feel like I am back on track.  I understand that Sunday is my rest day…but I gotta get a handle on my late night snacks on Saturday night…The Amazing Jeff and I usually stay up super late on Saturday.  Because that is the only night we can until said tax season is ova!  So then around midnight or so I am starrrrving, and so I eat.  Two weekends ago is was way too much pasta.  Boo.  Last weekend I chose cereal.  Not too bad but it was still more in the realm of a “meal” calorie wise and not a snack.  I classify a Meal as 300 or more calories.  A snack is under 200…but I like the number 100 better.  And like magic…EAS Lean 15 strolled into my life.

Mmm, protein.  It makes me happy. Num.

Speaking of protein!

Almond Butter Protein Balls

Eas® Lean 15™ – Protein Powder; Chocolate Fudge, 2 scoops powder
Honey, 4 Tbsp
Almond Butter – Creamy, 1/3 cup 
Chia Seed, 1 Tbsp
Raw Whole Flaxseeds, 3 tbsp
Dark Chocolate Chips, 3 tbsp (14 grams)
Add all ingredients to a large mixing bowl
Stir well, consistency should be like play-dough…ish.
Roll into 15-17 balls, about 1 inch in diameter.  Put in fridge to set, I am letting these sit overnight.  Makes 15-17 balls (Mine made 17).  1 Per serving: 77 calories,  8 carbs, 5 fat, 3 protein.
I think next time I will go with the mini milk chocolate chips.  I think the regular size ones are too big.  Also, I thin I might do some rolled in chopped almonds too, for some ca-runchI so cannot wait to sink my teeth into these babies!
Tomorrow (Friday EVE!), my sis-in-law and nephew Justin, and baby niece Rihanna will be up here in the Twin Cites for a school event for Justin!  I am super excited to see some family, and get some baby time.
I have to say…what a difference a day makes!!!!  I was crab-apples on Monday.  Seriously.  For seriously real.  For sereal.  And today I am hap, hap, happy.
 I had thought that a certain endevor was what I wanted to do.  But it isn’t.  I can see already, without even really getting involved that this is not for me.  I see poor attitudes, and hurting, not helping.  I am mad that I made the investment without really thinking about what I was getting into.  I did my due diligence in researching and getting rep (current & former), and customer reviews.  I thought I was making a good decision.  But clearly I am not.  Oh well, live and learn right?
BUT…I did figure out what I wanna be when I grow up!  I wanna be a Toys’R’Us kid…wait no…that’s not right.
I am however, not revealing it just yet.  I have a lot of work to do before I can make it a reality.  It involves going back to school, and in order to do that I must have some more moo-lah.  Or win the lottery…or at the casino next weekend!!  TAJ and I are doing our “fun” Valentine’s Date Night at Treasure Island on the 18th.  A Jujitsu classmate of TAJ’s is fighting at the Island!  I am super excited to go to a fight where we have actual seats.  Fingers crossed I win upwards of 5 grand…eek.
