Have you heard of Freekeh? Well, let me tell you it’s pretty awesome!
My friend Bonnie started Freekeh Foods Inc and launched her Freekeh earlier this year and launched a cookbook to boot!
What is Freekeh you ask? It’s a grain that is high in protein much like Quinoa! It looks like brown rice, but it is so much better! Not only is this a great grain for you…but it’s also the ONLY organic Freekeh in, I do believe, the world!
- 8 grams of protein, 8 grams of fiber per serving and it’s low-fat
- Easy to cook – just like rice
- Vegetarian and vegan
- Farm to table and sustainably produced
- Versatile in all types of recipes: main dishes, sides, salads and many others
- All natural. Not bioengineered.
The above pictured dish is a great introduction to Freekeh! and super simple and a very cheap meal! I don’t know what she calls it, but I sampled it at one of Bonnie’s demos at Whole Foods here in Minneapolis!
What you need:1 bag of Freekeh (both she and I used the Tamari blend) 1 can of broth (I used vegetable but any will do) 1/2 water 1 carton fresh mushrooms, sliced 2 tbs olive oil 2 cups pea pods or snow peas, cut in thirds
Add the olive oil to a non-stick skillet and saute the mushrooms until brown and softened. Add broth, water and Freekeh. Simmer for 15-20 minutes or until most of the liquid has cooked down, stirring occasionally. Add the pea pods and continue stirring until the pea pods are heated thoroughly, about 3 minutes. Enjoy!
This makes 4 servings, but if you are like me I eat half of what it makes right away!
Bonnie was featured on the Dr. Oz show where she told her incredible weight-loss story and her blog is also featured on the DR. Oz website! How cool is that?!
