Lasagna roll ups!


You might know that I am a huge fan of pasta.  And if you don’t…well I love pasta.

So I found this on Pinterest, and tweaked it a bit and now I am sharing it with you.

Lasagna roll-ups

What you need:

6-8 whole wheat lasagna noodles, cooked and rinsed.  Pat dry with a paper towel for easier ricotta application
1 jar of red sauce of your choice, I added italian turkey sausage to 1/2 of mine
1 small container of low-fat, or fat-free ricotta cheese
1-2 cups spinach, fresh
1 zucchini, cut into thin strips, or shredded your choice
1 cup shredded mozzarella cheese
 

Preheat oven to 350, and spray a baking pan with cooking spray.  Then layer on your ricotta, sauce and veggies.  Be sure to leave about 1-2 inches cheese & sauce free at the end of each noodle for easier rolling, and less oozing.  Then roll up, and place in pan.  Once all roll ups are in the pan, cover with the remainder of the sauce and top with the mozzarella cheese.  Bake for 30-40 minutes, or until the cheese is just starting to brown.  Enjoy!
