Holmberg Freezer Fill up Party Prep Pt. 1


In preparation for The Bump’s arrival home, I have been planning a 2 day-all-out freezer cooking binge.  I sat down and figured out how long I don’t want to meal plan, coupon, shop, prep and cook.  And I decided on a nice round number of 12 weeks.  So I will be doing 12 weeks of meals in a two day session with the help of friends!

Here’s the menu for the freezer fill up party:

Breakfasts:
Buttermilk Pancakes
Pumpkin Pancakes
Blueberry pancakes
Red Velvet pancakes
Zucchini Bread pancakes
French Toast
French toast bake
Pumpkin Pie french toast
Waffles
Breakfast bowls
Oatmeal packets
Strawberry rhubarb oatmeal
Breakfast burritos
Breakfast pockets
Egg McMuffins
Banana Bread
Pumpkin Bread
Zucchini Bread
Lemon Blueberry bread

Lunches & Dinners:
Chili
Beef Stew
Stroganoff
Cheesy chicken & rice
Chicken parm
zucchini skillet
tater tot hot dish
Tomato Basil Pasta
chicken wild rice soup
tomato & basil soup
Chicken & dumplings
Meatloaf
Apple Glazed pork chops
Stuffed pork chops
Turkey dinner
Scalloped potatoes & ham
Rigatoni Pasta pie
Lasagna roll ups

Chicken & stuffing
Alfredo casserole

In total we will be making 525 meals.  YIKES!

How I got to that number…well we need 3 meals per day for both The Hubby & I, for 12 weeks.  And I know with Thanksgiving, and Christmas in there…we’ll have lots of food.  Plus…we are doing a potluck open house after The Bump comes home…so yay more food!

So the plan…we are not actually cooking everything.  The breakfasts will be cooked, as they need to be pretty much grab, heat and go.  For the most part, the lunches/dinners will be just freezer prepped.  Meaning veggies chopped, and freezable ingredients will go into freezer bags with the instructions for cooking on the bag.  The plan is to be able to put these meals in the crock pot in the morning, and cook all day.  Ready for the Hubby when he gets home!  Then the leftovers, as most of these recipes are doubled, will go in the freezer for later.

Each freezer bag should yield 5 servings, and we will be doing 2 freezer bags of most of the lunches/dinners.
