1/3 cup rolled oats
1/3 cup water
1/3 cup milk
Salt and pepper to taste
1 tablespoon of cornmeal
1-2 eggs (or egg whites), scrambled
1 1/2 cups baby spinach
3 tablespoons shredded cheddar cheese
1. Cook oats with cornmeal as directed.
2. Top with eggs and cheese. Serve on top of baby spinach.
I gotta say, this was surprisingly good. I was thinking this could be a disaster, but it was really yummy. I know eating eggs and spinach and cheese with your oats sounds strange, and it took some getting used to, but adding the cornmeal and cheese helped to balance it out. A very good option for a lunch or dinner if you are focusing on getting good carbs in your diet (oats are awesome for that!), or are looking for something totally different. I have made this a few times now and I love it. I have even tossed in a handful of mixed peppers into the eggs, and mushrooms too, for added veggies in my meal.
Now the recipe states to top the oats with the spinach, but I started adding them to the eggs so that they were cooked just a bit to soften them. It just tasted better that way.
